1/2 Salmon filet
1 table spoon of cottage cheese
2 table spoon of avo
1 slice of rye bread
1 egg
1 garlic clove
1 drizzle of olive oil and 1 squeeze of lemon
1 one hand full of roka salad
Pine nuts and sunflowers seeds, salt, pepper, chilli flakes.
Pre-heat the oven at 200 degrees.
Put the salmon fillet in an oven proof dish and leave it for 18 minutes.
Put water to the boil, and soft boil your egg. (See the post PERF-EGG_TION)
Prepare a slice of rye bread, scrub the garlic onto it.
Spread the cottage cheese. Smash the avo.
Once the salmon and your egg are cooked, add them on top.
Sprinkle your favourite nuts, a drizzle of olive oil, salt, pepper, and a squeeze of lemon.
Spread a few roka leaves and you're done!
Note that if you're in even more than a hurry, you could always prepare the egg and the salmon in advance. If your week is on a tight schedule, you could imagine having steamed salmon one night, make a little extra for your next day Salmon on toast lunch.
